Our Winter Soup Recipe is not only delicious, it can help strengthen your immune system with nutritious ingredients, that are baked to retain as much of the goodness as possible making this a really healthy Tomato Soup Recipe that will quickly become a family favourite!

Winter is coming, and so, we are cautiously warned, is a particularly virulent flu season. Not to mention that COVID is still amongst us, adding to the urgency of making sure we are all prepared to stay safe, warm and healthy this winter. Looking after and strengthening our immune system is essential and requires a wholistic effort that combines healthy lifestyle choices around diet, exercise and stress control. Hypnosis can play a part in helping strengthen the immune system through lowering the stress  hormones that can cause damage and lead to many negative health outcomes.

One of the best ways to boost your immune system is through a healthy and balanced diet. The Mediterranean diet is one of the healthiest around, and we recently heard about a delicious and healthy soup that is easy to make and packed with nutrients. By adding white beans to the soup, you can enjoy a creamy and comforting finish, while also boosting your immune system. To make the soup even more nutritious, you can add any vegetables of your choice, making it perfect for fussy eaters. So head down to your local farmers’ market, fire up the oven, and get roasting! With the right diet and a little help from hypnotherapy, you can keep your immune system strong and healthy this winter.

Winter Soup Recipe

ROASTED TOMATO SOUP WITH CREAMY WHITE BEANS

Ingredients

1kg vine-ripened tomatoes, cut into quarters
1 red onion
6-8 cloves of garlic, unpeeled (or more if you like!)
1 tbsp pure maple syrup
125ml (half a cup) extra virgin olive oil.

2 cups water or stock
400g can cannellini or white butter beans, rinsed and drained
1/3 cup fresh basil

Instructions

  1. Preheat oven to 200ºC/400ºF.
  2. Place tomatoes, onion and garlic in a roasting pan. Combine the maple syrup and half of the oil in a bowl, season to taste; pour over vegetables, then toss to coat. Roast for 45 minutes or until the tomatoes are very soft and coloured at the edges.
  3. Place the water or stock and white beans into a saucepan, heat and blend with a hand held blender if a creamy consistency is required, add 3/4 tomato mix and cook over medium heat, stirring occasionally until heated through. Season to taste.
  4. Top soup with remaining tomatoes and a sprig of basil leaves; drizzle with extra oil and serve with crusty bread or oven baked croutons.

I also like to add a sliced zucchini to the roasting pan for an extra veggie boost.
